[速水もこみち流] #033 鶏の照り焼き~薬味のせ〜

【材料/分量】※2人分
鶏もも肉/ 1枚
サラダ油/ 大さじ1/2
A)ーーーーーーーーーーーーーーーーーーーーーーーーーーーー
塩・こしょう/ 各少々
砂糖/ 大さじ1/2
醤油/ 大さじ2
みりん/ 大さじ1
酒/ 大さじ1
だし汁/ 大さじ2
鷹の爪/ 1本

水菜/ 1株
紫玉ねぎ/ 1/4個
大葉/ 6枚
みょうが/ 2個
白ごま/ 大さじ1/2
七味唐辛子/少々


【調理工程】
① 鶏もも肉は包丁の先で全体を刺してから、サラダ油を熱したフライパンで皮目から両面こんがりと焼く。

②①の表面がこんがり焼けたら余分な油をふき取り、Aを加えて絡め、火を弱めて蓋をし、約10分蒸し焼きにする。

③水菜は3~4cm長さに切り、紫玉ねぎは薄切り、大葉は千切りにする。みょうがは斜め薄切りにして水にさらしてあく抜きした後水気を切る。

④③をボウルに入れ、白ごま、七味唐辛子を加えて和える。

⑤焼き上がりの鶏肉を器に盛り付け、タレをかけて、上に④の薬味を乗せる。
